Vodka Chocolate-Covered Strawberries

INGREDIENTS

3 cups whole strawberries, rinsed

1 ½ cup whipped vodka

1 ½ cup semisweet chocolate chips

2 tsp. coconut oil

parchment paper









Temperature: High


Time: 4 hours


Servings: Approx. 36 strawberries, size dependent






Recipe

  1. Place strawberries in a large bowl, then pour enough vodka over them to cover completely.

  2. Cover and refrigerate at least 3 hours.

  3. Drain strawberries (reserving vodka for future use) and pat dry.

  4. Put vodka into a covered container and return to refrigerator to use in strawberry-flavored drinks at a future point in time.

  5. Line a medium baking sheet with parchment paper.

  6. In a small microwave-safe bowl, combine chocolate chips and coconut oil and microwave in 30-second intervals, stirring in between, until completely melted.

  7. Dip strawberries in chocolate, turning to cover all but stem and place on a prepared baking sheet.

  8. Refrigerate until chocolate is set, about 30 minutes.
